Wickedywitch Recipes – Normandy Chicken

Cooking oil

1.5kg/3lb of chicken, cut into cubes

1 Onion chopped

1  Garlic Clove crushed

3 rashers of bacon chopped

25g/1oz of flour

425ml/15 fl.oz of dry cider

2 red apples cored and chopped

150ml/5 fl.oz of double cream

Heat oil in saucepan and add your chicken pieces and brown on all sides, then remove and put on a plate. Add onion, garlic and bacon into the saucepan and fry for 5 minutes. Stir in flour to form a smooth paste. Gradually stir in the cider and bring to the boil, then simmer for 2 minutes.

Return chicken to the pan and simmer for 40 mins or until chicken is cooked through. Stir in the apples and cream and heat for 3 minutes; do not bring to the boil. It will catch on the bottom of the pan if you’re not careful.

This recipe serves 4 and is lovely with rice.
